Fruit And Vegetable Flours Make Gluten-Free Diets Even Easier

There are a lot of options out there these days for those who want or need to follow a gluten-free diet. From tapioca to rice to potato flour, there are a multitude of ways to make just about any wheat-based product without the wheat. Now, there's another one -- an exciting one -- called Anti-Grain.



Anti-Grain is a new company -- it just finished its Kickstarter campaign -- that makes flour out of fruits and vegetables: sweet potato, squash and apple, to be exact. Not only are these three flours made from non-GMO, U.S.-grown produce, but they are grain-free, gluten-free, kosher, allergen-free AND nut-free. That's a mouthful, we know, but that's the world we live in.



As you might imagine, these fruit and vegetable flours don't work like your basic white, all-purpose flour. If you've ever tinkered with alternative flours you know that each type comes with its strengths and weakness. The couple behind Anti-Grain is open about this fact, and they've even highlighted on their site which flours work best in which recipes. From brownies to fresh pastas, you can find all kinds of dishes that work with these flours on their site -- with notes and tips, to boot.



The fruit and vegetable flours are drum-dried at relatively low temperatures to retain as many nutrients as possible. The amount of vitamins they're packed with are astounding. The squash flour has 130 percent of your daily needs for Vitamin A. Bake a cookie with that flour and you could maybe get away with calling it a multi-vitamin. Maybe.



The flours will be available online December 2014, and will cost between $8-to-10 dollars (depending on the kind) per 8-oz. bag. Check out Anti-Grain's website for more information.
